This former Hanseatic city boasts magnificently decorated historic half-timbered houses, the delicious Einbeck bock beer, and Europe’s largest collection of classic cars at PS.SPEICHER. Einbeck and its 46 surrounding villages also excel when it comes to relaxation in nature: strolling through the city, along the historic city wall, relaxing in the parklands, hiking in the “Hube,” Einbeck’s city forest, or cycling from castle to castle. A wide variety of regional products, such as Einbeck mustard, are produced here. During a canoe trip on the Leine and Ilme rivers, you can explore Einbeck’s urban areas directly from the water, and at the nearby Northeim Lake District, there are plenty of opportunities for pedal boating, sailing, stand-up paddleboarding, and swimming.
